Viking Fries

Gluten and lactose free recipe


  • Carrots - 200 g
  • Sweet potatoes - 200 g
  • Potatoes - 200 g
  • Olive oil - 2 tbsp
  • Thyme (preferably fresh) - 2 tsp
  • Salt - 2 tsp
  • Fresh parsley (chopped) - approx. a handful


1: Turn on the oven at 200ºC.

2: Carrots, sweet potatoes and potatoes are now washed and peeled. Then cut into medium sized coarse pieces.

3: Take a large bowl and flip all the vegetables with olive oil, salt and thyme.

4: Take an ovensafe dish and evenly place the vegetables - just pour on excess oil.

5: Bake the fries in the oven until golden brown on the outside. Remember to turn them around every 10 min.

6: When they are done, then top them off with freshly chopped parsley.
