Creamy Tiramisu

Creamy and rich dessert perfect for dinner parties

Coffee Syrup:
4 tablespoons cocoa powder
1.6 dl Espresso or strong coffee
4 tablespoons of cocoa or other dark liqueur
4 tablespoons of Cardamaro or other mild amaro
1 tablespoon vanilla extract
Mascarpone filling:
5 large eggs
1.1 dl sugar
1 pinch of salt
680 g Mascarpone
Ca. 30 Ladyfingers
Cocoa to sprinkle
Here's how you do it:
1. Coffee syrup: Mix cocoa, hot espresso, cocoa, cardamaro and vanilla extract in a deep bowl until smooth.
2. Mascarpone filling: Mix eggs, sugar and salt in a bowl and let it heat over a water bath for approx. 5 minutes with constant stirring.
3. Mix the mascarpone mixture with a high-speed electric electric whisk until the eggs are fluffy.
4. Decrease speed to medium and start adding mascarpone, approx. 0.5 dl at a time. Once all the mascarpone is added, scrape around the bottom with a dough scraper, then continue mixing at medium speed until the mixture is even, approx. 5-10 min.
5. Dip each ladyfinger into the coffee syrup with one fork, one at a time, and then place it on the bottom of a baking sheet. Top with half of the mascarpone filling and smooth out the surface, lightly powdering cocoa over. Repeat with the remaining ladyfingers until the syrup is over so the top is with mascarpone. Powder generously with cocoa.
6. Cover and let rest in refrigerator at least 1 hour before serving.
